For the second episode of my “Organic Treats & Tunes” cooking series, I chose a recipe inspired by my song, “Memories Not Dreams”. My easy, dreamy, 3 ingredient peanut butter cookies!
Now I am not a good baker, but these foolproof cookies come out perfectly every single time! And you only need three ingredients that you probably already have in your kitchen!
I chose this recipe for this song because I think it’s important to treat ourselves sometimes. Yes, we should live a healthy lifestyle, but there’s nothing wrong with a cookie every now and then! Especially organic ones! The song has a strong message of doing what you love while you can so you don’t look back with regret someday. And as small as a cookie may be, I think it’s important to indulge once in a while! And what better way than with sweet peanut butter cookies! Plus, if it makes you happy, even for a moment, why would you regret it? That’s something I think about a lot. “Will I regret spending my time like this someday?” If yes, then I’m wasting my time. If no, then whatever I’m doing is important to my happiness, health, career, etc.
I think that’s one thing we should keep in mind more often in our busy lives. We have such limited time, and it goes by so fast. We need to spend as much time as possible smiling, laughing, growing, and living in the moment. Some things I know I’ll never regret spending my time doing? Playing music, cuddling with my cats, reading a good book, working on my physical and mental health, and spending time with those I love.
The one thing I will say about this recipe is that you must NOT overbake them. They burn lightning fast, so set a timer and watch them close! As long as you stick to exactly 12 minutes at 350 degrees, you’ll be good!
I love these cookies with a glass of milk. They’re also great with things added in like chocolate chips, M&M’s, nuts, etc! To keep them, store in an airtight container for up to a week, or until they get stale.
